{i love how it turned out.}&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;&lt;a href="http://4.bp.blogspot.com/-3UHtM04e-7I/TwI4uQbj2DI/AAAAAAAABAU/zxGHZCCPH9s/s1600/tablerunner.JPG" imageanchor="1" style="margin-left: 1em; i didn't really know what i was getting myself into...they were a lot of work, but i enjoyed the process {for the most part} and LOVE how they turned out.&amp;nbsp; i've got enough fabric to make a few more for any future kiddos...so these will last our family for quite some time {hopefully forever}.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; not accidental as in i accidentally bought 10 quarts of pears, but accidental in the fact that i had not planned to set out on this venture alone.&lt;br /&gt;&lt;br /&gt;you see, i have this goal...to become involved in my ward.&amp;nbsp; so seeing an opportunity, i signed up for 'canning groups'.&amp;nbsp; 'great', i thought, 'this is a great way to be doing something and meet people'.&amp;nbsp; little did i know that the term 'group' was being used very loosely.&lt;br /&gt;&lt;br /&gt;a week or so after signing up i got a call from a friend in the ward.&amp;nbsp; she found a great deal on pears and wondered if she could pick some up for me.&amp;nbsp; i thought that sounded like a great idea...that is until she said they weren't really going to be able to do the groups...since it was the weekend before school started.&amp;nbsp; but by then...it was too late.&amp;nbsp; i was stuck...with 10 quarts of pears.&lt;br /&gt;&lt;br /&gt;so i peeled.&amp;nbsp; and i peeled.&amp;nbsp; and i peeled.&amp;nbsp; then i got excited and started filling jars...but i only filled 3 1/2 jars...so i peeled some more.&amp;nbsp; and i peeled.&amp;nbsp; well, you get the idea, there was a lot of peeling involved.&amp;nbsp;&lt;br /&gt;&lt;br /&gt;it really wasn't as technical a process as i had imagined it would be.&amp;nbsp; hot water.&amp;nbsp; sugar.&amp;nbsp; lids.&amp;nbsp; steam canner.&amp;nbsp; and lots and lots of time.&amp;nbsp; and peeling...don't forget the peeling.&lt;br /&gt;&lt;br /&gt;luckily for me, all of my jars sealed and i can call this venture a success.&amp;nbsp; but i must give credit where credit is due.&amp;nbsp; first to my mother-in-law who gave me the steam canner a few Christmases ago...thank you, thank you, thank you!&amp;nbsp; and to my own mother...who answered several distressed questions and gave great over-the-phone instructions.&amp;nbsp; i've been hearing lots of great things in the nutrition world about kale chips for quite some time now, but just haven't gotten around to making them.&lt;br /&gt;&lt;br /&gt;so...here we go.&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;a href="http://1.bp.blogspot.com/-3g3h9wfsZYg/TjRD3xN6iKI/AAAAAAAAA8s/a9xT8O2FPYU/s1600/KaleBefore.JPG" imageanchor="1" style="margin-left: 1em; the texture was the interesting part...it was almost like eating dry leaves...but more tasty.&amp;nbsp; they were fun to eat in a way, just because of the way they crunched in your mouth. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;i would say that if you have a burning desire to eat kale (which is chalk full of nutrients) this would be the way to go.&amp;nbsp; (well, maybe that's just me and my relationship with chocolate.)&amp;nbsp; well that's what happened with the &lt;a href="http://www.melskitchencafe.com/2011/04/congo-bars.html"&gt;congo bars&lt;/a&gt;.&amp;nbsp;&lt;br /&gt;&lt;br /&gt;my mom made these when i was visiting in early may...and here it is almost the end of june and i still can't get them out of my head.&amp;nbsp; so i broke down and made them.&amp;nbsp; i say 'broke down' because a) they are slightly complicated [a two step process is just beyond my 'easy' qualification]...and b) i'm pretty sure i can eat the whole pan by my self [my bike and i will be spending much more quality time together this next week to compensate].&lt;br /&gt;&lt;br /&gt;so now the pan of deliciousness is cooling, the anticipation is killing me, and my house smells incredible.&amp;nbsp; but after a lot of sweat, i finally got it planted this morning.&amp;nbsp; we're taking a low-key approach this year and hoping for the best.&amp;nbsp; i mostly used the seeds i had left over from last year, along with a few extra plants.&amp;nbsp; i got the strawberries from a friend (thanks keri!) back in april.&amp;nbsp; in addition to the strawberries, we've got basil, cilantro, dill, a green pepper, two varieties of carrots, radishes (just to space out the carrots...who actually eats radishes?!), three varieties of cucumbers, marigolds, beans, and a pumpkin.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; water, water, everywhere and not a drop to drink.&amp;nbsp; okay, so we do have water to drink, but still, we have had water in plenty of places we don't need it.&lt;br /&gt;&lt;br /&gt;anyways, we're all dried out now and our fridge is fixed.&amp;nbsp; GROSS.  seriously.&lt;br /&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://1.bp.blogspot.com/-oiiVRQqLxoU/TXkcY6US5DI/AAAAAAAAA14/efmZKj9MO4E/s1600/vinegar.jpg"&gt;&lt;img style="cursor: pointer; width: 176px; height: 176px;" src="http://1.bp.blogspot.com/-oiiVRQqLxoU/TXkcY6US5DI/AAAAAAAAA14/efmZKj9MO4E/s200/vinegar.jpg" alt="" id="BLOGGER_PHOTO_ID_5582524427399259186" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;long story short, i did some online research and found that vinegar was the answer.  so i filled my sink (just enough to cover my glasses laying down) with hot water and some vinegar, soaked them over night...and wa-lah!  sparkly clean!&lt;br /&gt;&lt;br /&gt;there are a few small spots that could have easily been removed if i had been ambitious enough to scrub them, but i think i'll just soak them again when they start to cloud up again.  (they also do say that a cap-full of vinegar in your dishwasher (after it's started to fill) will help prevent the buildup.)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;#2--terrible hard-water stains on my glass shower doors.  again...vinegar to the rescue, plus a few other ingredients.  the online research results recommended lemon juice (applied with a sponge) for the most of it, and then a paste of vinegar and baking soda for the tough spots (but my whole door qualified as a tough spot if you ask me).  then you spray with a mix of water and vinegar.  then squeegee or finish with window cleaner.&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;br /&gt;&lt;/div&gt;this wasn't quite as dramatic as a result, but it still worked.  i'm planning on doing a second round and hopefully it will all come off.&lt;br /&gt;&lt;br /&gt;ah the power of vinegar...&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' href="http://www.melskitchencafe.com/2008/11/my-favorite-bread-bowls.html"&gt;bread bowls&lt;/a&gt;&lt;br /&gt;sat - out&lt;br /&gt;&lt;br /&gt;phew...i didn't realize i was so behind.&lt;br /&gt;&lt;br /&gt;now here's my plan: keep things recorded, note what works/doesn't work, and then reuse my plans...hopefully improving functionality, variety, and nutritional value.  this past week (last listed) was prob the most successful in the variety/functionality category (note common ingredients broc, green onions, ham), but not so much in the nutritional value area (note the syrup, cream cheese, and half&amp;amp;half).  so...it's a work in progress...and prob always will be.&lt;br /&gt;&lt;br /&gt;i'm also working on a loose 'day of the week' theme: mondays = breakfast, tues = crockpot/sandwich, wed = beans/rice, thurs = pasta, fri = soup/sandwich.  we'll see how that goes.&lt;br /&gt;&lt;br /&gt;anyways...it's going well, and making my cooking life much more type='text'>basil, oh how i love thee...</title><content type='html'>in case you haven't heard, i have a thing for basil.  i love it.&lt;br /&gt;&lt;br /&gt;so when it came time to plant our garden this spring, i planted quite a bit.  5 square feet or about 16-20 plants.  and just as i had hoped, it flourished.&lt;br /&gt;&lt;br /&gt;we've been enjoying it all summer long, and now as the summer comes to a close, it's about time i started preserving it for the winter (since that was the whole reason for the ridiculous amount of basil i planted).&lt;br /&gt;&lt;br /&gt;so after a brainstorming session with my mom and a bit of internet researching, i came up with 3 possible preservation methods.  now there are quite a few more than that, but 3 that seem to fit my purposes.&lt;br /&gt;&lt;br /&gt;1. chop and freeze in water&lt;br /&gt;2. chop and freeze in boiling water (to blanch while freezing)&lt;br /&gt;3. chop and freeze in olive oil&lt;br /&gt;&lt;br /&gt;so, i plan to try all three methods this year, and then in the future, i can use the one that works best for me.&lt;br /&gt;&lt;br /&gt;and just in case you were curious about the process, let me share...&lt;br /&gt;&lt;br 2 new recipes...new to me anyways.  both of these have been sitting in my mental 'what to make for dinner' file for a while now, so i finally got around to them this week.  first mexican chicken (i don't know where i picked this up, so if it's yours, thanks...take credit in the comments!).  second stromboli. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;mexican chicken  &lt;/span&gt;&lt;br /&gt;4-5 boneless/skinless chicken breast (I semi thaw and chunk them in approx 2 inch cubes, but you can leave whole frozen, I just found that if I leave them whole, we only get 2 meals out of this, if I chunk them, we get 4 meals)&lt;br /&gt;1 can corn, drained&lt;br /&gt;1 can black beans (I do not drain or rinse)&lt;br /&gt;1 can ro-tel tomatoes (don’t drain)&lt;br /&gt;cumin to taste (I love cumin so use approx 1 teaspoon)&lt;br /&gt;garlic powder to taste (same note as above)&lt;br /&gt;Option: If you have a lime hanging around, you can squeeze the lime juice in the pot too… or add a bit of the zest.&lt;br /&gt;&lt;br /&gt;All in the pot.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; Cook on low 7-8 hours or on high 4-6 hours in crockpot.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; Serve over white rice with some shredded cheese, sour cream and diced avocados.&lt;br /&gt;*notes in () are from the original author.    &lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;my notes: &lt;/span&gt;we quite liked this. i only used 1 chicken breast because that's all i had on hand, but it was still good.  i did cut them into chunks, which i would do again, but i would also shred it about an hour before serving.  i used frozen corn, just in case you were wondering.  also, i served it over brown rice, just because that's what we prefer.  i'll definitely make this again, mostly because it was super fast to throw together.  &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;font-family:verdana;" &gt;stromboli&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; *This recipe is courtesy of kristyn...thanks!&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;1 loaf Rhodes frozen bread dough, thawed but still cold&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; 2-3 tablespoons Dijon mustard&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; 1/3 pound thinly sliced ham&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; 1/3 pound thinly sliced cheese of choice&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; 1 egg, beaten&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; 2 tablespoons shredded Parmesan cheese&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt; garlic salt or garlic bread sprinkle, optional&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;On a lightly oiled surface, roll bread dough out into a 10x15 inch rectangle. Leaving 1-inch boarder on each side of bread dough, spread with mustard. Arrange slices of meat and cheese on dough, leaving 1-inch space along edges. Starting along one long side, roll Stromboli up "jelly roll" fashion. Pinch edges together to seal; fold ends under; brush top and sides with beaten egg; using a sharp knife, cut 1/2-inch deep vents along top; sprinkle with Parmesan cheese and optional garlic salt. Place Stromboli on a baking sheet sprayed with non-stick spray, seam side down. Cover with plastic wrap which has also been sprayed with non-stick spray; raise 30 minutes. Preheat oven to 350 degrees. Remove plastic wrap and bake 30-40 minutes or until golden brown and cooked through. /&gt;among the many things i love, i love shredded beef tacos.  pure goodness.&lt;br /&gt;&lt;br /&gt;and since this was just one of those "attempts" here are a few notes for next time:&lt;br /&gt;*that's all i had, otherwise it would have been a whole onion&lt;br /&gt;**i would use additional fluid [water or beef broth], it was slightly dry, but still tasty&lt;br /&gt;***though it was tender enough, if i had added more fluid, it could have cooked for another 45 minutes and been even more tender without being overdone&lt;br /&gt;&lt;br /&gt;this recipe brought to you by bec and border="0" /&gt;&lt;/a&gt;&lt;br /&gt;i have a feeling it was doomed from the beginning.  it's only been under my supervision for 10 days now...and it started this limp behavior from day 2.  i kept the soil nice and damp.  i put it in the sunniest place in my house.  i did everything right...so really, i'm not crediting the demise of this sad little guy to a failure of my green thumb.  i'm type='text'>branching out</title><content type='html'>one of my goals this year is to branch out a bit as far as recipes go.  it's been an interesting process during the last year of cooking for 2.  combining tastes and preferences isn't all that easy when you've both created habits during your long single existence.  so...it's been (and continues to be) a process of trial and error to find things we both like.&lt;br /&gt;&lt;br /&gt;here are a few of the recent recipes i've tried.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://realmomkitchen.com/31/lion-house-dinner-rolls-with-honey-butter/"&gt;lion house rolls&lt;/a&gt; -- so this was the first time i have ever attempted rolls...and i must say, they turned out quite tasty.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://thepioneerwoman.com/tasty-kitchen/recipes/sidedishes/creamy-mashed-potatoes/"&gt;pw mashed potatoes&lt;/a&gt; -- the last time i made mashed potatoes...not good.  so i took the challenge and mastered the mashed potatoes.  they were good, but i have a feeling it had more to do with the cream cheese and half and half than me.  good, but neither of us have a real love for mashed potatoes, so...these won't be repeated very often.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://realmomkitchen.com/441/crock-pot-chops-and-gravy/"&gt;crock pot pork chops&lt;/a&gt;  -- these were fine.  not fabulous.  but fine.  i don't think i'll make them again though. &lt;br /&gt;&lt;br /&gt;&lt;a href="http://allrecipes.com/Recipe/Lemon-Rosemary-Salmon/Detail.aspx?prop31=1"&gt;lemon rosemary salmon&lt;/a&gt; -- so good.  and very pretty. in honor of our engagement anniversary, salmon was on the menu (but no snails this year).  we were both quite impressed with this recipe.  easy and tasty. &lt;br /&gt;&lt;br /&gt;my goal is to try something new each week...so far so good.  i'll keep you /&gt;i've quilted before.  i've pieced a quilt before (see the lovely little number above).  i've had my fair share of figuring out many a different patterns.  and quite successfully i might add.&lt;br /&gt;&lt;br /&gt;but today, today is not a successful day.  just now, i spent the better part of an hour marking a quilt top. it's a simple little thing.  cute.  easy.  but for some reason, i'm just not using my quilting brain today.  i marked the two ends of the quilt completely wrong.  and i'm frustrated.  frustrated that i didn't figure it out until i was almost finish marking it.  frustrated that now there are pencil marks all over my quilt top that are completely incorrect.  frustrated that i didn't take one simple step (comparing the two edges before marking lines across the entire top, which didn't quite line up, but i thought it was just because the fabric was slightly stretched and that I had missed a marking here or there) to avoid all of this.  okay, so now that i've vented...i guess i'll figure out how to fix my brainlessness.&lt;br /&gt;&lt;br /&gt;that's all.  just wanted the rest of you to know that you're not alone in your fumbles. He could have made them non-discriminatory to the types of food our bodies require [meaning a cookie will provide equal nourishment as a bowl of blueberries].  but He didn’t.  and i believe He did this for a reason.  which leads me to believe very strongly that we were given these physical bodies to teach us something more than ‘all foods fit’.    &lt;br /&gt;&lt;br /&gt;now, don’t get me wrong, i am no where near perfect in my food choices.  just like i am no where near perfect in the rest of my choices.  but, every day, i make an effort, to make better choices.  and isn’t that what it’s all about, being better?  doing our best?&lt;br /&gt;&lt;br /&gt;so this leads me to my current attempt, my attempt at being intuitive.  i’ve actually been working on this for a while.  it first started when i gave myself permission to really allow all foods to fit.  i stopped restricting those ‘not so good’ foods and started figuring out how they make my body feel.  how do i feel after i eat a burger and fries?  let me tell you…awful.  but i still do it…because i forget how awful i feel afterwards.  how do i feel after a chicken fajita full of fabulous toppings like salsa, cilantro, avocado, cheese, sour cream?  wonderful.  fabulous.  so my new attempt it so really pay attention to how my body feels. &lt;br /&gt;&lt;br /&gt;but this doesn’t end with food.  it spills over into fitness.  now, i first will confess.  since i started grad school, running, etc, has been hard to fit into a routine.  i ran a bit here and there.  hubby and i even started training for a relay race.  but it just never really fit into my life.  thus it never stuck.  back to being intuitive.  as i started really paying attention to how my body felt.  i realized how horrible i felt.  my muscles felt tight and weak at the same time.  i felt like my entire body was full of toxins and staleness.  so, with an early delivery from santa, our bike trainer arrived. &lt;br /&gt;&lt;br /&gt;&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://2.bp.blogspot.com/_KL1FvCF9j4U/S1DmGjwRxVI/AAAAAAAAAdk/jVQveWMPF6k/s1600-h/bike+trainer.JPG"&gt;&lt;img style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 300px; height: 400px;" src="http://2.bp.blogspot.com/_KL1FvCF9j4U/S1DmGjwRxVI/AAAAAAAAAdk/jVQveWMPF6k/s400/bike+trainer.JPG" alt="" id="BLOGGER_PHOTO_ID_5427090551332783442" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;it didn’t get much use in december due to the craziness of grad school.   however, since coming back from christmas, it’s been busy.  the first week, my body felt good.  i could almost feel the nastiness that had been building up in my muscles seeping out.  however, the current sinus infection that has invaded my nasal cavity has strongly discouraged the use of the bike trainer or any extra physical effort for that matter.  but, that’s part of listening to my body.  not pushing when it needs to rest.  pushing harder when it feels good.  listening.  being intuitive.&lt;br /&gt;&lt;br /&gt;this philosophy also doesn’t end with fitness.  sleep.  for the last…well i don’t know how long, i’ve been one to pride myself in how early i could get up in the mornings and still function.  while dating hubby, i was averaging 5, maybe 6 hours a night on a regular basis.  not good.  i don’t know what it is about grad school, but my once 7 hour requirement has spiked to 9 or 10.  so, in the spirit of listening to my body, i actually let myself stay in bed after hubby leaves in the morning. i anticipate that as i continue to be more intuitive, this number will probably change.  i’ll just have to keep listening. &lt;br /&gt;&lt;br /&gt;so, what does this all boil down to? (i mean really, have you met my hubby?!) okay, but really, this post is really about my luck in winning prizes.  at the nutrition conference i attended in denver, i entered to win this very cool kitchen appliance called the acti-fry.  it makes french fries from 2pounds of potatoes with only 2 tablespoons of oil.  and as a rd who happens to enjoy french fries, this is very cool.&lt;br /&gt;&lt;br /&gt;so...my prize, the acti-fry, arrived at our door a few weeks later...and i was thrilled.  seriously.  jump up and down thrilled. Between my thesis and moving...survival has been the main goal for the last 2 weeks. &lt;br /&gt;&lt;br /&gt;We're currently moving from survival mode to functional mode...which includes my "attempt" to organize.  Our new place is slightly smaller than our last place...that factor on top of the complete chaos that is created by moving has created a disaster area in our 2nd bedroom.  My current "attempt" to deal with that situation includes shutting the door and walking away.  Maybe next week will be a real "attempt"?!&lt;br /&gt;&lt;br /&gt;PS...I should be embarrassed to admit that our "attempts" at eating well have resorted to freezer meals and frozen pizzas, but I'm not.  That's just life.  And life isn't perfect.  And neither are my eating habits.
